From the Gooseberry Patch Homemade Christmas recipe book. Super easy, no yeast to test, no leaving the dough to rise. I'm not a fan of eggnog to drink, but I think I'd happily eat this bread;

2 eggs, beaten
1 c. sugar
1 c. eggnog
1/2 c. melted butter
1 tsp. vanilla extract
2 1/2 cups all purpose flour
2 tsp baking powder
2 1/4 tsp ground nutmeg

In a large bowl, combine eggs, sugar, eggnog, melted butter and vanilla. Blend well. Add remaining ingredients and stir until moistened. Grease the bottom of a 9 x 5 loaf pan and pour batter into it. Bake at 350F (175C) for 35 to 45 minutes. Loaf is done when a toothpick (or stick of uncooked spaghetti if you've not toothpicks. That one is my tip, not GBP's) inserted in the center comes out clean. Cool completely before slicing. Makes one loaf.
